Gnocchi in Sage Butter Recipe

People this recipe is a long time coming! Yet I am completely convinced that waiting for these Gnocchi in Sage Butter was totally worth it.

A tender and gooey Gnocchi in Sage Butter recipe that tastes amazingly buttery with just the right hint of herbs. Italy on your plate wherever you are!

A couple of weeks ago my boss invited my colleagues and me to have lunch with her at an Italian restaurant right off campus. Let’s say it’s that kind of place where the waiters are arrogant because why not, you get nice napkins and the wine menu even at lunch time. Aka this place is a little more on the fancy side.

Because I am indecisive AF when it comes to picking food at a new restaurant I studied the menu online before and chose a fancy pizza with rocket, parmigiano and parma ham. I was thrilled! The day came, we met at the restaurant everyone picked their food and when it was my time to order I realized that EVERYONE else had ordered a pasta or gnocchi dish. That alone wouldn’t have put me off ordering my fancy pizza. But….

So this might be a good moment to tell you why eating pizza in public is kind of a struggle of mine. Whenever I eat pizza it gets messy. Very messy. Tomato sauce on my forehead and cheese on my lap kind of messy. I often tuck my napkin in my shirt like a child in order to prevent my shirt from getting splattered in sauce. This kind of messy!

And as I really didn’t want to eat like a pig in front of my boss and the waiter was already looking at me impatiently I picked the first thing I saw on the menu which happened to be Gnocchi in Sage Butter.

I didn’t regret it for a second!

I think I ate a pound of butter and it was glorious. I might have even made some smacking sounds but only because I was so busy supressing other rather indecent sounds and loud declarations of love for said dish. I have no idea what kind of table talk we had I somehow regained conscience when we ordered espressi. In terms of table manners I am not sure if ordering pizza wouldn’t have been the better alternative.

And as a proud member of #teamgreedy of course I had to recreate it. The outcome was a tender and gooey gnocchi recipe that tastes amazingly buttery with just the right hint of herbs. I used a little less butter than the restaurant because even though I love butter they meant it maybe a little too well and I also added a touch of red pepper to spice things up a bit. Heaven!

Ingredients

125g Butter, melted
1 handful of sage leaves
1/2 tsp salt
1/2 tsp pepper
1 clove of garlic
1 small mild onion - about 1/3 cup (can sub for 2 medium spring onion)
1 kg gnocchi
red pepper flakes and parmesan to garnish

Instructions

Preheat the oven to 180°C
Give all the ingredients but the gnocchi, the red pepper flakes and parmesan into a food processor, mixer or blender and mix until you have a smooth butter mix
Give the gnocchi into a large pan and add the sage butter mix. Stir through until the gnocchi are completely covered in butter
Put in the oven and bake for 10 minutes or until the gnocchi are soft
Garnish with parmesan and red pepper flakes and serve immediately

Notes

The gnocchi get more firm again once they cool but you can easily heat them up in a pan on the stove top, in the oven or in the microwave. I'd suggest this order of priority.
Serve with a glass of white wine - I swear it's a game changer!
