Sweetpotato Gnocchi Salad

Ingredients for Gnocchi

  • 1 large Sweetpotato
  • 1/2 coconut flour
  • 1 large egg
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp tandori masala
  • 1/2 tsp cumin
  • 3 tsp curry powder

Ingredients for the Salad

  • 1 large bell pepper
  • 1 zucchini
  • 250 g cocktail tomatoes
  • 300 ml tomato sauce
  • salt & pepper
  • 1 tsp oregano
  • 1 tsp sambal


  • Cook, bake or microwave the sweetpotato until soft
  • Give it to a food processor and blend, now add the coconut flour and spices and blend again - if you don't have a food processor you can also just use a fork to mix everything together
  • Give the dough into a bowl, add the egg and knead with your hands until well incorporated
  • Now form the Gnocchi out of the dough - it's easier if you form a large roll and cut it into little pieces, roll them with your hands until they look like small eggs
  • Place the Gnocchi carefully on a baking tray and bake in a fan oven at 180°C for approximately 10-12 minutes
  • Melt some coconut oil in a frying pan and add the gnocchi - fry until lightly brown
  • In the meantime give all the veggies on a baking tray and bake for about 15 minutes
  • Give the veggies in the pan, now add the tomato sauce and spices and stir well. Let it cook for a few minutes and enjoy warm
