As much as snacking is a legit thing when I am on a roadtrip or out in the nature (the latter one really doesn’t happen that often) at some point for sure I fancy something a bit more hearty. Usually when lunch time rolls around I get
crabby hungry and a snack doesn’t do the trick anymore. For these occasions I like to pack a lunch sandwich… or a couple of them! My current favorite is this Healthy Sweet & Spicy Cream Cheese Lunch Sandwich!
When you’re on a road trip and maybe stay in motels along the way you usually have no access to a kitchen. But when there’s a fridge in your room or you have access to an ice machine you’re good. Because that’s really all you need to make great sandwiches to keep you happy and fueled when you’re on the road.
One of the places where I can get entirely lost is American Supermarkets. The fact alone that you can have a Starbucks in your local supermarket baffles me. I should probably stop making sound Germany like a backwards country. No wonders you get asked if there is democracy, cars or 3d movies in Germany (I wish I was joking!) But I digress!
Supermarkets! After checking out and loading my cart with every snack that sounds appealing we usually start to get some staples for lunch. Sandwiches are always the best option in my eyes as you need no more than your hands to eat it.I personally like to add a variety of products to make sure I have a great variety of flavors and texture. This Healthy Sweet & Spicy Cream Cheese Lunch Sandwich won the competition this year. Okay after having it for the first time there was no competition anymore. It’s that good. Creamy, sweet and spicy.
This Healthy Sweet & Spicy Cream Cheese Lunch Sandwich reall has it all. With as little as 4 ingredients it brings maximum taste on your lunch table. Whatever your lunchtable looks like. We ate sitting on rocks, standing at our hood or even while driving.Anything works. Sandwiches rock!
The cream cheese is the ideal base for the toppings. It brings a healthy dose of protein and fat and keeps the sandwich moist even after a couple of hours. The rocket brings a nice tangy and spicy touch and the sweet figs balance out the flavors nicely.
When you don’t plan to make this sandwich for the road, skip the top slice of bread and drizzle some hot mustard over the figs for the extra kick!
- 4 slices of bread
- 2 T cream cheese (plain or seasoned)
- rocket leaves
- 2 ripe figs
- salt and pepper (optional)
- hot mustard (optional)
- Spread the cream cheese evenly on two slices of bread
- Add the rocket leaves and top with the figs
- Add a little salt and pepper
- Top each with another slice of bread
- If you have no salt and pepper at hand I'd go for any kind of seasond cream cheese. We had a one with onions for example that added a really nice touch!
- If you feel a bit fancy hot mustard takes this sandwich to the next level.
