Healthy Carrot Cake Smoothie with Frosting

I have always had a soft spot for smoothies. It’s safe to say that besides making nutbutters my Thermomix’ main occupation is blending all kinds of greens, fruit and other ingredients into deliciously creamy and frothy smoothies.

Since I bought the smoothie blender for the office I am all kinds of gaga about all the smoothies. I have at least two a day and I couldn’t love it more. The whole shared office fridge is full with spinach and almond milk and the whole freezer compartment is crammed with frozen berries and bananas. No shame.

As much as I love a simple green smoothie or a banana, cinnamon, almond milk blend sometimes I like to experiment a little and make a smoothie that tastes like dessert. Chocolatey smoothies are far up on my list of favorites but lately there is another one that might take over the crown. This Healthy Carrot Cake Smoothie with Cream Cheese Frosting tastes like cake but you won’t find anything nasty in the list of ingredients.

I have two pet peeves when it comes to smoothies. First I hate it when I drink a giant smoothie that completely fills me up but leaves me ravenous about 20 minutes later. My smoothies have to be filling and satisfying!

This Healthy Carrot Cake Smoothie with Cream Cheese Frosting  is packed with protein without using any supplements. It is full of good carbs and healthy fats which makes it an ideal breakfast, pre- or post workout snack which for sure won’t leave you hungry for a few hours.

Secondly I am a temperatur and consistency snob. I want a creamy consitency that’s not like soup or juice and I need my smoothies to be ice cold. In my books nothing’s worse than a lukewarm soupy beverage. I want the milkshake experience!

This recipe is perfectly fitting this bill. Not only is the Carrot Cake Smoothie base frothy and creamy but it is also topped with a rich tasting but perfectly healthy cream cheese frosting. Fot the ultimate milkshake experience I either freeze the hell out of the ingredients or I make a double batch and freeze it in freezer bags overnight and then just blend it up the next day. Carrot Cake Milkshake anyone?

Healthy Carrot Cake Smoothie with Frosting

A delicious smoothie that tastes like carrot cake but is perfectly healthy and jam-packed with nutrition which makes it the ideal breakfast, pre-or post-workout snack!

Ingredients

Ingredients for the Carrot Cake Smoothie

  • 2 medium carrots
  • 1 overripe banana or 1 ripe banana + 1 tsp agave syrup extra
  • 3 T oats
  • 1 T hazelnut butter or almond butter
  • 1 tsp agave syrup
  • 1 cup almond milk
  • 1 tsp cinnamon
  • 1/2 cup crushed ice

Ingredients for the Frosting

  • 3 T cottage cheese
  • 3 T almond milk
  • 1 tsp cinnamon
  • 1 tsp agave syrup

Instructions

  • Give all the ingredients for the smoothie in a food processor or blender and blend until smooth and frothy
  • Pour in a large glass but leave a little space for the frosting
  • Give all the ingredients for the Frosting in the food processor or blender and blend until smooth and frothy
  • Now spoon the frosting on the smoothie and enjoy

Notes

My blender is too big for the frosting so I use a hand-held blender
For a thicker and cremier smoothie omit the crushed ice and freeze the banana, carrots or almond milk instead
I freeze my almond milk in silicone muffin forms - this works perfect!

 Carrot Cake Smoothie

This recipe is an adaption of my favorite Carrot Cake Birthday Pancake recipe in smoothie form and the frosting is largely inspired by the cream cheese frosting on this pancake recipe.

I am creature of habit and phases. I am in a bad smoothie phase since a few weeks now and I hope there is no end to this soon. There’s something so decandent in drinking a cakey dessert like breakfast every single morning without having to give it a second thought. And I also don’t mind to drink my veggies!

    Looks good Juli!
    I must admit I’m not a huge smoothie drinker/ lover. I love a green juice now and again but now that it’s so hot smoothies are looking more and more appealing! Maybe I just haven’t found ‘my perfect smoothie’ yet!

      Maybe you should look for a good gateway smoothie that is more on the juicy side of the scale. I’d recommend Meg’s Easy Breezy Tropical Orange Smoothie. It’s delicious and might get you hooked 😉
