Happy Wednesday lovelies! I am so happy that it’s already the middle of the week. That means I have only 5 of these days left before I can escape to 4 days off over the Easter holidays. After that things won’t exactly calm down but I won’t be interviewing all day every day anymore. At the moment I work like a lunatic and don’t get to do anything besides. I have a long list of people I owe replies (apologies you all!) and my apartment needs some care as well. And since I have a very important presentation regarding my thesis in the middle of April I had to start working from home on the weekends. But after all there’s a light in the end of the tunnel….
So far so good! Let’s talk about food!
When I went food shopping on Saturday I invested an arm and a leg in a pound of asparagus. The first of the year. I can’t describe the taste I can only say how much I loved it! As always marinated in a concoction of olive oil, lemon juice, salt, pepper and garlic! I am drooling! I inhaled it in a rush in the 10 minutes between two appointments. It was a shame as it would have been a wonderful dish paired with a glass of wine enjoyed in the sun!
After work I raced home inhaled two slices of Essner Bread, changed in my soccer cloth and raced to practice. I haven’t been there in ages and thought nI needed some moving around and getting my head cleared. It was good to run again a little.
For dinner we had Italian stuffed Potato Skins with cheese. A perfect dinner, warm, comforting and carb loaded after running for 1,5 hours. I wasn’t awake much longer afterwards 😛
Today I will go to Crossfit again. And now I am in a rush again with 7! appointments! Luckily today I have at least 30 minutes in between for a proper lunch break! Potato Skins again! Yummy!
