I am sitting at my desk barely alive. This morning I needed two cups of coffee before I was ready to change into appropriate pants. I just sat on the couch and tried to keep my eyes open. I slept like a stone but felt the same when my alarm rang way too early. I hope I manage to make it through the day without the need of a nap. Though if I took a nap in my car or in my office this might cause some gossip 😛
Yesterday was a long day. It started benign enough with a Tit Bake – Banana Egg Bake – my breakfast to go. Yesterday I felt a little cristmassy and so I added some speculoos spice and topped it with hazelnut butter and honey. Along side a coffee and some Brothers & Sisters. Perfect!
I spend the morning talking with my colleague about all the bits and pieces we need to finish before on the 31st of December our project finally ends. I am so thrilled. The new sponsoring will make things a lot easier for us!
When the clock hit noon I was pretty hungry and luckily I didn’t eat my intended Monday dinner on Monday evening so I had it left for Tuesday’s lunch. A giant salad made of lettuce, bell pepper, tomato, carrots, guac and roasted chicken breast. Definitely one of my favorite lunches.
In the afternoon I discussed my dissertation with my colleague. After setting a strategy last week I wanted to test it with her as my sparring partner. Luckily she backed my thoughts 🙂 During the afternoon I munched on those bars. I have a huge thing with them. Definitely a staple of mine. Especially the apple cinnamon one is way too delicious <3
Then I went to Crossfit. Let’s just say I almost cried in the supermarket later when I didn’t get the veggies I wanted for my veggie curry. I was beyond exhausted and only the idea of cooking something almost brought me to tears again. So I ditched all my intentions and send a text to my husband that it was his task to get us our standard take away for the evening. Dürüm Döner. It’s the healthiest take away you can get and first and foremost it’s absolutely delicious!
Then as a dessert I had a few of those Paleo Christmas Cookies. Totally delicious, totally grain-free and no added sugar. Recipe to come on Friday 🙂
And when I am really honest I might remember a few Toffifee that found their way to my mouth, too 🙂
