What I ate Wednesday #49 – Whole30 Eats Week 4

Hello everyone,

Happy Wednesday and happy WIAW! Today I am working from home again and I am so happy about that. This morning a painter comes to fix our windows. I actually don’t really get why a painter is doing that and not a window maker (if there’s such than a window maker) but I don’t complain as long as our windows are fixed in the end.

It’s my 4th and last week doing the Whole 30 now 😀 I have discovered some great paleo recipes and I am also experimenting with my own. A whole new world. It’s always amazing how creative you can get when you’re forced to leave out some ingredients.

Let me show you some yummy dishes I enjoyed yesterday.

Breakfast

I thought I might get bored with 4 weeks of TIT BAKE but I don’t :-D. Yesterday I made a snowy mountain tit bake version aka covered in almond butter and shredded coconut. Not really whether coordinated but totally delicious. I dropped off Stefan at his workplace and then I headed for the Gym! We did some lifting and I loved it. Front Squats were on the plan and we tested out our 2 rep max. I ended up with 37,5 kg (~83 lbs) at my first ever front squat session. I am so pleased with that! My mood was over the moon for the rest of the day 😀

Lunch

When I arrived at the office afterwards I had some stuff to do immediately and I postponed my hunger with a cup of coffee. Around an hour later I had lunch. Zucchini Spaghetti with my Quick Bolognese. And as a liquid dessert I had a can of chilled coconut water. Best ever! My two colleagues and I had lunch together and we had a nice and funny chat about hot Crossfit guys 😉 And we marvelled about the fact that one of our fellow box members looks like 40 instead of his real age of 56. Amazing! Even the guy who’s almost my father’s age is kinda hot (what is somehow a disturbing and disgusting thought)

 

Snack

I worked my way though a pile of last pre-vacation to-dos and around 5 pm I got really hungry. One of my favorite and almost dessert like snacks is a chopped banana with almond butter and shredded coconut. So good and it definitely fights any sweet cravings. Though my cravings are more on the salty side at the moment 😉

 

Dinner

When we came home Stefan went to his soccer practice and I went to the kitchen to prepare dinner and lunch for today. As everything is just so much yummier in mini version than in its original size. Think of Mini Quiche, Mini Burger and of course Mini Schnitzel… so the dinner idea was born: Mini Schnitzel with Sweetpotato Hash Browns. Again I crusted the Schnitzel with a coconut and  almond curry crust. I definitely found my favorite crust ever.

The hash browns were amazing and I made a fantastic looking Hashbrown Lasagne with the leftover Quick Bolognese. Recipe to come on Friday 😉 Do you want a sneak peak? Okay here you go:

Later we watched the World Cup Semi Finals. I swear I never saw anything alike. Not only that Germany literally destroyed our host Brasil with 7:1 they even set two new records! Miroslav Klose now is the record holder of the most World Cup goals and this was the highest semi final scoring ever. Literally epic!

Now it’s time for work and a second coffee.  Have a fantastic Wednesday <3

    First: soccer! Gaaah! Even I as the least ever soccer fan was completely at awe. Unfortunately, the online live stream sucked BIG time so I missed the 4th [or 5th? – I clearly lost count in that moment] goal.
    Second: mini Schnitzel. You’d better believe my cauliflower nuggets will turn into those soon. We already agreed everything mini is better – as are those long spoons like the one in your breakfast picture. I have them in so many colours it’s ridiculous. Almost. Because you can never have too many spoons. Also, I like how you’ve gone completely [coco]nutty 😉 .

      I gawked at that screen in disbelieve! It was ridiculous. And it looked so effortless. I was completely torn between awe and pity! Poor Brazilian Team! So much pressure. That had to crash them at some point!
      Oh yes, Cauliflour Schnitzel sounds nice 🙂 I love those spoons. I habe them in several colors (6 I think) and it may sound stupid but they are so smooth in the mouth that you have an extraordinary smooth eating experience.
      Haha love the play on words. I am definitely (coco)nutty at the moment 😀

    I hadn’t actually been paying much attention to the World Cup but THAT GAME! Wish every football match was as exciting 😉

      Me too! Well besides I wouldn’t be able to watch them anymore. This was almost too much for me!
      hehe the name was born because of a funny shape after using a special bowl. And then Arman went crazy about it and banned me from using the original name by threatening to never speak to me again. I simply couldn’t risk that… The poor dish never had a proper chance 😀

      I use it as a booze substitute at the moment 😉 In the evening I drink it over crushed ice and some slices of lemon or some frozen raspberries.
