Sweetpotato Bruschetta

Hello lovlies,

I am just popping in to show you my today’s lunch. I didn’t plan on posting this recipe nor did I have a real recipe but my lunch turned out to be so darn delicious that I don’t want you to deny to enjoy this quick and easy piece of deliciousness.

Ever since I say Arman’s massive Birthday Breakfast Bruschetta on Wednesday I knew I needed something alike in my life asap! As I try to cut back on grains at the moment I decided I needed another base. And what’s always a wonderful base for anything? Yes, you’re right! Sweetpotato!

So the idea was born!

Sweetpotato Bruschetta

Ingredients

  • 1 sweetpotato
  • 2 cups tomatoes
  • 1 spring onion
  • salt and pepper
  • cheese

Instructions

  • Cook the sweetpotato in the microwave and let cool slightly. Then cut it in half lengthwise. Then cut the halves in half lengthwise again. You should have 4 bread like slices now
  • Cut the tomato and spring onion and mix together in a small bowl with salt and pepper. Set aside for an hour to get a great flavor.
  • Now layer the tomato mix on the sweetpotato slices and sprinkle/ cover completely with cheese
  • Now you can microwave or bake the bruschettas in the oven until the cheese is melted

Okay guys my self-proclaimed 10 am lunch break is over now and I have to go back to work. And I really regret that I gave the other serving to Stefan. I WANT MORE!!!!
