My favorite Salad

Hello everyone,

it’s Monday morning and I am back in the office with a sore throat. I have an appointment in about 1 hour that took forever to be scheduled so I just couldn’t stay at home though I would have loved to. I am very tired and I feel a cold approaching! NAY!!!!! But it’s Monday and today I am sharing the recipe of my favorite salad ever with you.

When I switched on the computer this morning I had a holy lot of new E-Mails. Most of them really nice ones from new programm members sending in some information. But two of them really got under my skin. I had three girls I wasn’t sure about when they applied for the program. Sometimes you just know troubleshooters right away. And BINGO!!! Two of them are already complaining about their program partners. The reasons behind these complaints are both absolutely silly! If there was a true reason I would try to solve the problem but there simply is no problen to be fixed! I am so irritated! I decided not to answer these mails this morning. I might be a little unfriendly! Sometimes I have issues with my temper!

But let’s move to business now. Food talk might calm me down a bit ;-).  I hope you enjoy…

Juli’s Favorite Salad

Ingredients:

  • 2 hands full of mixed green leafy salad
  • 100g canned chickpeas
  • 1 cup mixed and chopped bell pepper
  • 250g cherry tomatos
  • 1 spring onion cut into small pieces
  • 1 tbsp chipotle sauce
  • 2 tbsp guacamole
  • grated cheese optionally

Directions:

  1. Prepare the salsa: Chop the tomatos and add the spring onion and chipotle sauce
  2. Layer in a big bowl in the following order the mixed green leafy salad, mixed bell pepper, chick peas, salsa, guac, cheese
  3. Let set for 2 hours until the salsa has soaked through the salad
  4. Enjoy!

20131028_092334For me it’s the perfect lunch. You can use a lot of leftovers and you can prepare it in the evening to take it to work in the morning. Chickpeas are my favorite but you can of course use any other beans or lentils.

Now I have to go back to work. I am still irritaded but I might be able to answer her soon.

      Everything is better with some guac or salsa – but when you combine it… heaven 😉
