Hello everyone,
I can’t believe how quickly my London weekend has passed! Too bad it’s over because it simply was fantastic! We had a lot of fun, did a lot of walking, had a lot of cider, a lot of great food and spend a holy lot of money 🙂 Doesn’t that sound fantastic? I will tell you a little more about my trip during the week. You will get a proper food wrap-up on Wednesday when it’s WIAW time and I will tell you about my want-do list too 🙂 But today it’s time for a new recipe..
On Wednesday my new project starts officially. I am so glad when it’s over because there is a lot of pressure on this evening. I have so many participants and my doctoral thesis is connected to the whole program. So this year must be a huge success in order to ensure that I get sufficient data.
Since I have not so much time for meal prepping I found some mug cakes on my menu over the last two weeks. They are a super fast and easy yet delicious treat that never fails to hit the spot. I hope you enjoy…
Chocolate Protein Mug Cake
Ingredients:
- 3 tbsp coconut flour
- 1/2 cup unsweetened apple sauce
- 1 large egg white
- 1 tbsp raw cacao powder
- 3 tbsp chocolate rice protein powder
- 2 tbsp hazelnut milk
- a pinch of baking powder
Directions:
- Mix it all together
- Pour in a mug and microwave for 3-5 minutes
Nutritional Information: 250 kcal, 3,2 g fat, 29,8 g carbs, 22,2 g protein
It’s done when it’s firm but still looks a little moist. I like to prep the dough in the morning and microwave at work. I topped it with some crunchy salted peanut butter. A winner! You can see the perfect consistency on this picture of the half eaten deliciousness.
And the best thing about it? It is absolutely filling! I am not hungry for hours! I will work on some mug cake recipes over the next weeks and will share with you soon 🙂
