yes, I am going to say – this, wait for it – iiiit’s HUMP DAY!!!!! You know what that means for me: Home Office Day 🙂 Luckily! Yesterday I was sitting in my office and at one point mid-interview I was not sure what the girl across the table was actually talking about. I had forgotten what I had asked her and I had forgotten to take notes. Ooooops! I need some sleep seriously! So this morning I slept till 7am which is a huge improvement for me since I get up around 5am most mornings.

Trying to fit into my wedding dress made my last day’s food choices not really interesting. There were loads of cottage cheese, egg whites, protein shakes and salads with lean meat included. Yummy but not pretty and certainly not worth to create a post about. Anyway I would never deny me the fun af a WIAW post! So instead I decided to show you a few of my favorites from the last weeks. If it’s not apple pie I love to make my oatmeal with raspberries or blueberries and vanilla or blackberries & nuts.
You all know how much I worship my cottage cheese. If it’s not cottage cheese I am all up for snacking sweet. Lately apples and I really became great friends. Apple pie, apple strudel I love all apple & cinnamon heavy recipes. You can find my recipe here: Healtyh Apple Strudel I have a life bar at least every other day. It’s such a great pre-workout snack. I gives you the fuel you need for a good sweat. Recipe to come! If fruit was carbless I could live on fruit alone. Berries are my favorite. Recently I am craving Mexican Food like crazy. Everything is so much better with a little salsa and guac on it! These salads make it on my menu about 2-3 lunches a week! YUM YUM 🙂 My lunches are usually pretty salad based. I like to have some green leaves and then add different things. Different veggies and quinoa are a safe choice. Absolutely delicious and filling. And great for meal prepping! I also like to add some leftovers to my salad. Here I had figs, mozzarella cheese and some roasted turkey breast. OHM only the memory of this salad makes my mouth water!
I try to limit my carbs intake in the evening. So for supper a salad wrap is my choice of wrap. You can fill it with whatever you like and it always hits the spot! Great way to eat up your leftovers. Find the recipe here: Green Wrap Another option to satisfy spicy food cravings and limiting carbs is to simply enjoy your enchiladas tacoless. The cheese makes it extra good! Another one of my all time favorites! I love to make a huge batch of these burger patties and freeze them. I take them out of the freezer and let unfreeze overnight. I enjoy them plain (sometimes as a snack) or with a salad as a side. They don’t need to be stored cool so you can take them with you without carrying a cooler. Find the recipe here: Mixed Bean Burger

Today I am spending some time with my research and then I am trying some new recipes all based upon the huge spaghetti squash lying in my kitchen. I think of something sweet and something gravy! Tonight we’ll have some girl’s time. My sister, cousine and a friend come over to my appartment and we’ll watch a display of a new german tv show. It’s an adaption of Project Runway and we were studio guests. So we’re trying to spot ourselves tonight on TV 🙂 I hope cutting the show might make it better because the studio visit was long, exhausting and unfortunately very boring! Fingers crossed 😉
This weekend a new goal of my want-do list will be achieved! I am looking forward to it very much! I am not telling you now but I will keep you posted 🙂
