Hello everyone,
I am shocked that I am able to tell you that I had a nice AND relaxing weekend! Yes really! I am not kidding you! Last week I told you I would work from home on Friday but well let’s say I didn’t. I needed to go to the office but I kept it light and worked only 6 hours. In the afternoon my hubby and I bought a new freezer and somehow we managed to carry it from the car to the appartment. More than once I had the lattice pressed to my face during that process. And at one point I was laughing so hard that I almost dropped the hole thing. But we managed to bring it home unscratched. Now I am happy to have a new place to store my frozen goods. I am great at baking but not so good at eating my bakes π And we got a decent 25% discount since we bought the demonstration model. Strike π
Saturday we spend eating π We started the day with breakfast with friends at their house where we were intodruced to their cute little boy. Our friends are planning their wedding in June next year so we talked a lot about wedding stuff. So much fun when it doesn’t involve me in the whole preparation process π
In the evening we met with friends at the best local restaurant we have. You get the best and cheapest steak you can imagine! So the evening was brilliant!
Sunday started with a little cleaning and then our nieces came over for baking. It’s their favorite thing to do with us because we color the cookies and cakes with blue and purple frosting and we allow them to have sugar sprinkles whilst decorating the cookies. No need to be too strict when you’re not the parents π
And now again too soon it’s Monday which means it’s Munch my Monday time…
Last WIAW I showed you one of my favorite breakfasts. I have it every day at the moment because it’s fantastic for a chilly fall morning. And it tastes more like a dessert than a healthy breakfast! Apparently you liked it so I won’t keep my recipe from you. So today we’ll have a breakfast version of Munch my Monday.
Apple Pie Oatmeal
Ingredients:
- 1/3 cup oats
- 1 tbsp physillium husks
- 1 tbsp ground flaxseed
- 1tbsp chia seed
- cinnomaon (I use a lot)
- 1-1 1/2 cups water
Directions:
- Bring the water to boil
- In a bowl mix the oats with the water and stir a little
- Now add the phisillium husks, cinnamon, ground flaxseed and chia seed in this order (I figured out this is the best order to prevent blobs)
- Stir well and then let it set for 3-5 minutes
- Now stir in the apple pie topping
How I prepare my apple pie topping:
- apple
- raisins
- cinnamon
Directions:
- Dice the apple and put itΒ in a caucepan
- Cook the apple with 1 cup of water and the cinnamon
- After 2-3 minutes add the raisins (I use 10g raisins per apple)
- Cook for about 5 minutes or until the apple is soft
The apple pie topping is perfect for meal prepping. It lasts about 4-5 days in the fridge. But it actually never makes it to day 3. It’s too darn delicious! If you like to add some crunch I would recommend to add chopped almonds. One portion is about 1 apple (130g) & 10g raisins with cinnamon oatmeal.
Nutritional Information (for one portion): 263 kcal, 5,7g fat, 41,5g carbs, 13,2g fibre, 7g protein
I am a huge oatmeal lover. Sometimes I try to eat someting different to breakfast but every morning when I get up I am craving a hot bowl of oatmeal. I love to cinnamon everything. Cinnamon is one of the best spices for me. It satisfies almost every craving. And it’s good for your metabolism. It warms from the inside so it’s perfect for a chilly fall day. Try this recipe – you will be hooked! Promise! The raisins add extra thickness and sweetness to the topping. It tastes really more of a dessert.
I told you about my wedding dress issues last week. I tried it again yesterday. Good news I can breath again! Bad news I don’t feel comfartable in it yet. But I have 5 more days to go. I hope 2 pounds will be possible to loose. Should be enough to have a good evening. Fingers crossed friends!!!!
More interviews for me this week. But it’s the last week of interviews. Finally! The next 3-4 weeks will be pretty busy but after that I will have some time to breath! Finally! I am yearning for a slow week!!!

i’m not a huge oatmeal fan either! i rarely ever crave it. my sister loves it tho, every morning. she’d probably like this but minus the raisins!
