I hope you had a fantastic weekend.
Mine was awesome. Saturday morning was a little hectic and stressful. We woke up in the morning and started to built up our two new Ikea items, what turned out to be not as easy as anticipated (as always!) Do you know what I mean? Anytime one of us says: “Oh let’s do this or that, won’t take long, very easy” we end up taking 3 days and a lot of nerves. I remeber the one time we JUST wanted to hang up a few pictures…. major fail! Never use words like JUST, EASY, FAST in terms of refurbishing and redecorationg! My huband ended up knocking in the nail with one of my dumbells because our hammer was nowhere to be seen!
Then we headed to the shops and did a week’s food shopping. Back home we had a quick lunch and cleaned the flat. Then I left for an appointment with my nail designer. When I came back home the pizza dough was already prepared and my husband left for a soccer match. We had friends over that night and we ended up with way too much food and drinks. It was a fantastic evening!
Yesterday we finally had our stand-up paddling crash course. Now we are entitled to lent a board and hit the lakes in our area. That was so much fun! Due to my tight core muscles I did great (for the first time I was one of the best participants!!! YAY NEVER happens!) As a plus that was a pretty amazing workout! We spend the evening at my in-laws with a BBQ. Yummy!
When I prepared some snacks for Saturday evening I remebred that I never shared my amazing hummus recipe with you! All our guests kept saying how great the hummus tasted (and I have to say it was probably the best I ever made!)
So, here you go:
Clean Eating Hummus
- 1 cup chickpeas
- 1/2 cup tahini
- 1/2 lemon
- 2 spring onions
- 1 clove of garlic
- 1 tsp cumin
- 1 tsp bell pepper powder
- salt and pepper
- water (if needed)
Directions:
- Roughly chop garlic and spring onions
- Peel the lemon and mix it with garlic and onions in the food processor until smooth
- Now add the chick peas and tahin and mix until the consistency is smooth again
- Now add the seasoning and blend well
- Add water until you reach the consistency of your liking
It won’t take you longer than 5 minutes and you have a clean, fantastic tasting hummus. I promise you won’t regret it!
This is finally the last week before I go on holiday! So much needed! I am truely feeling the need for a break. My body is just so slow and tired. I am really much looking forward to my italian summer break!
For now I have another enormous helping of spring rolls packed for lunch. I am so addicted!

I make a southern version with black-eyed peas instead of chick peas and add jalepenos.
