Monday morning and I am back from a weekend of pure indulgence! I ate almost everything(!) I normally avoid!
To sum up, I had:
- Crêpes wit Nutella
- Chocolate covered strawberries
- Several drinks
And additionally I barely slept. Friday to Saturday I found about 6h of sleep and from Saturday to Sunday I only slept 2h! Way way way too little.
Yesterday I felt rather shitty and I barely managed to eat all day. My belly was so big I looked at least 6 month pregnant. I felt horrible. And then I began to ask myself why I am doing this to me. I am indulging like this not more than once every other month or so but I KNOW how badly I cope. But I do it again. I am hopeless… no I am not. This is just the usual post-sugar weeping. I’ll get over it – soon!
One great thing happened this weekend too: I found these amazing Nike Frees 3.0. The color was new in store (only arrived Friday evening) so I got my size easily. I was in sneakers heaven and wore them all weekend and today at work, too. Not my usual style at work but I had serious separation anxiety 😛 Maybe I need to invest in another pair for the gym.
So it’s Monday morning and since my body feels like a healthy treat I decided to go on Tosca Reno’s Cooler Plan #1 for this week. It’s the strictest of all Cooler Plans and I am happy to follow a limited diet for one week now. I think my body really needs to reset.
So I spend quite some time in the kitchen yesterday afternoon and did a decent job in preparing our food for today. My hubby had the same stomach issues as I and I could convince him to follow my eating scheme this week as well.
So for today we’ll have a great lunch made from leftovers. It’s perfect for lunch since you can throw together the ingredients easily and it’s a great way to limit your carb intake:
For one person
- 2 big leaves of iceberg lettuce (you can of course use every kind of lettuce but iceberg is my favorite)
- One hand full of lamb’s lettuce
- 1 bell pepper (cut into strips)
- Cherry tomatoes
- 100-150g roasted turkey (we had some left from yesterday’s BBQ)
- 1tbs homemade herb curd (at the moment I love to do mine with spring onion and chives)
- Spread the curd onto the lettuce leaf
- Fill it with all the other ingredients
- Wrap it
Just too easy and a yummy and fresh lunch made form leftovers. You can of course add many many other things as well. When I’m not low carb I like to add chick peas, black beans or sweet potato. It tasted great with avocado, carrots, cucumber etc. as well. Just check out whatever’s in your fridge that needs to be eaten and wrap it. You’ll love it!
So now I am ready for Meal #2. I’ll have some cottage cheese and cucumber.
