Tostada Ranchero Brunch Skillet

A filling and nutritious brunch. Creamy, fresh and crunchy and a little heat. This Tostada Ranchero Skillet is brunch heaven!

Ingredients

  • 1 can black beans
  • 1 can sweet corn
  • 1 cup grated cheese
  • 1/2 cup sweet cream or milk the milk will make it a little less creamy
  • 1 tsp bell pepper powder
  • 1 cup tomato diced
  • 1 spring onion
  • 1 T lime juice
  • 1 tsp habanero sauce or other hot sauce
  • a pinch of salt
  • 4 to stadas can sub each for a handful of tortilla chips
  • 4 fresh eggs
  • 1 avocado

Instructions

  • In a pan heat the black beans and corn. Add the cream and bell pepper powder and let simmer on low heat for about 2 min. Add the graded cheese and keep simmering until the cheese is melted completely and a creamy sauce has formed
  • In the meantime chop the spring onion and give it to a small bowl.
  • Add the diced tomato, the salt, the habanero sauce and lime juice. Stir through and set aside
  • Bake the tostadas in the oven according to directions on the package. This should take about 3-5 min
  • Fry or poach your eggs
  • Cut your avocado
  • Place your tostadas in the pan and fill with the ranchero sauce. Top them with your eggs and add the avocado

Notes
