For the basic Avocado Toast
- 3 slices of bread my favorite is onion/rye bread
- 1 ripe Avocado
- sea salt and pepper to taste
For the Toppings
- 1 large egg
- feta cheese
- cocktail tomatos
- crema di balsamico to drizzle
- chickpeas
- 1/2 handful rocket
- lime juice
- 1 spring onion
Preperations
Fry, cook or poach an egg
Dice the domatos, chop the rocket and cut up the spring onion
For the basic Avocado Toast
Toast the bread and let cool slightly
Spread 1/3 of the Avocado on each slice
Add salt and pepper to taste
Top it up
On the first slice layer crumbled feta cheese and tomatos and drizzle with crema di balsamico
On the second slice layer the chopped rocket and chickpeas and drizzle with lime juice
On the thirs slice carefully place your egg
Sprinkle all slices with spring onion
