Homemade Bailey's Ice Cream Sandwiches

A creamy and rich Bailey's Ice Cream that is perfect for the (adult) summer indulgence. Make it a Nutella Cookie Ice Cream sandwich for the ultimate summer treat!

Ingredients

Ingredients for the Ice Cream

  • 2 cups whipping cream
  • 1 cup Bailey's Irish Cream
  • 2 large eggs
  • 1 tsp vanilla extract
  • a pinch of sea salt

Additional Ingredients for one Sandwich

  • 2 Cookies I use Oat Cookies
  • 2 tsp Nutella

Instructions

Directions for the Ice Cream

  • In a large bowl combine all ingredients and mix with a mixer until everything is well combined for about 2 min.
  • If you have an ice cream maker - perfect! Transfer the mass to your ice cream maker and proceed following the instructions of your ice cream maker.
  • If you don't have an ice cream machine, no worries. This works as well in the freezer. Just place the bowl in your freezer and give the mass a good stir every 20 to 30 min for about 4 h until the ice cream is frozen solid

Directions for the Ice Cream Sandwiches

  • For one sandwich cover the bottom side of two cookies with a tsp Nutella each
  • Add a scoop of Bailey's Ice Cream on one Nutella covered Cookie and place the other one on top
  • Press lightly together and enjoy immediately or freeze immediately for later

Notes

All ingredients should be very cold prior to processing. I'd recommend to place the cookies and nutella in the fridge about 30 min prior to making the sandwiches
Sometimes the ice cream from the ice cream maker is not solid enough for making ice cream sandwiches. Just transfer it into a freezer friendly bowl and freeze in the freezer for another 30 min until solid. Proceed as described above.
