Cook, bake or microwave the sweetpotato until soft
Give it to a food processor and blend, now add the coconut flour and spices and blend again - if you don't have a food processor you can also just use a fork to mix everything together
Give the dough into a bowl, add the egg and knead with your hands until well incorporated
Now form the Gnocchi out of the dough - it's easier if you form a large roll and cut it into little pieces, roll them with your hands until they look like small eggs
Place the Gnocchi carefully on a baking tray and bake in a fan oven at 180°C for approximately 10-12 minutes
Melt some coconut oil in a frying pan and add the gnocchi - fry until lightly brown
In the meantime give all the veggies on a baking tray and bake for about 15 minutes
Give the veggies in the pan, now add the tomato sauce and spices and stir well. Let it cook for a few minutes and enjoy warm
