Paleo Christmas Cookies

  • 1 cup prunes
  • 1 cup coconut flour
  • 1/2 cup almond flour
  • 1 pinch of salt
  • 1/2 cup melted coconut oil
  • 1/2 cup agave syrup
  • 3 tsp speculoos spices
  • 2 tsp cinnamon
  • 1 pinch of allspice
  • 2 medium eggs
  • hazelnuts


  • Give the prunes, salt and spices into a food processor and pulse
  • Now add the melted coconut oil and agave syrup and pulse again until you have a smooth paste
  • Add the eggs and beat lightly until well combined
  • Now add the coconut and almond flour and beat again lightly until all ingredients are well combines
  • Now form little balls out of the dough. I discovered that the best way it to wet your hands and knead a dough roll and then cut into pieces. Now roll between your hands and place on a lined baking tray. Press lightly with the palm of your hand and garnish with a whole hazelnut.
  • Now bake in the oven at 180°C for approx. 12 minutes or until dry and lightly brown.
  • Let cool and store in an air-tight container up to one week.
