The bibliophile in me already regrets that there are way too many books out there for me to read. You will just never get finished. The list grown longer and longer and you get more dissatisfied with every new book you add to the list. Yet you carry on. Same applies to recipes! The foodie in me already regrets that there are way too many recipes out in the crazy blog world for me to ever try. Yet I leave comments under recipe posts like
“I need to try this soon!”
“Oh this looks so good, I want this now!”
“Next time I have ingredient X at home this is going to happen!”
… and I mean it! I really mean it! Sometimes I follow my words and make a certain breakfast, salad or dessert, sometimes even on repeat. But sadly most of the time I just pin the beautiful image and forget about the recipe altogether. There are just so many talented bloggers out there who are recipe creating machines and sadly I want to eat it all!
Lately I’ve spent some serious amount of time in the archives of some of those I ‘visit’ on a daily basis and chose my favorite of their recipes. Some are old, some are brand new. I picked those I always wanted but never made it to try or new ones that just looked too good not to make them. Commencing today I start a little series of WIAW posts featuring a full day of eats dedicated to one blogger each time.
Let’s start with a roundtrip through the recipes of: Clean Eats, Fast Feets!
My #1 today is the lovely lady from Cleveland not only because she rocks her veggies, makes me snort with laughter and considers a borderline pornographically amount of cheese exactly right but also because she agreed with me to make SANDWICHPORN a thing. For evidence, see the dinner! So on Sunday I had a little kitchen party with myself, juggling all the veggies and cheese for preparing a full day of eats Meghan Style!
Monday morning I woke up jazzed. Luckily all I had to do for having breakfast was pouring some cashew milk over my granola. No surprise here, the breakfast had to be granola! Since I already tried a few of Meg’s granola recipes so I had to settle for the newest: Almond Mango Granola! I am in love with it not only because it tastes pretty darn good but also because it is so quick to whip up. And I love the Mango! Along the granola I had my morning coffee and then went off to work!
My morning was pretty hectic with preparing for a meeting with the law professors we were writing an article with. I had to read the 54 pages again! and I have to admit in the end I was almost surprised how much of our input they really used. It’s sometimes not easy to work with professors who are used to get their way when your opinion is totally contradicting. But I think the compromise we found now is okay. At least more than I expected it to be!
In between complaining, discussing new soap opera-esque (is that a word?) aka very dramatic things that happened among my colleague’s friends during her vacation and feeding her bits and pieces from what happened at work in the meantime I had my lunch. We had the first serving of this Southwestern Pizza with Corn & Black Beans already Sunday for dinner and I am head over heels in love! I love beans and cheese and all the caramelized onions make it extra yummy.
Maybe in retrospective it wasn’t my most brilliant idea to faceplant a giant amount of onion before going on a business meeting but actually I didn’t really give a fuck! Luckily the meeting was short and went really well and we were back in the office around 3 pm.
In order ton make this a FULL day of eats of course my snacks had to be spot on, too! So as a pre-workout snack I had to have a #publicbanana! You knew this was going to come 😉
The workout was the first after my back strain and I went light on the weights and even restrained myself from going all out in the WOD. I am still playing all adult and mature! Luckily my back was okay. Fingers crossed the worst is over! When I came back home I was ravenous. I was glad that the planned dinner promised to be quick in preparation. I had actually chosen a different recipe for dinner but when Meg posted this unbelievably good-looking cheese-avocado deliciousness on Friday I had to switch to making this Avocado Cheese Panini! Holy yum!
I made a little sandwich tower sans avocado for Stefan when he came home and we celebrated our wedding anniversary 2.2 aka the day of our “non-civil ceremony” ceremony. Man that was agood day
