Today I am awfully tired. I woke up about 5 times tonight and when my alarm woke me in the morning I was unable to do more than move to the couch and crash there for another 2 h! Much needed. I ate two scones I am currently working on but I am not quite satisfies with the recipe yet. The texture is too crumbly and other things need a little tweaking, too. They tasted good nonetheless. Especially topped with raspberry thyme chia jam. Still work in progress.
But now let’s move onto Monday on my plates. Remember when I told you that I am not hungry at the moment and that we don’t use up the food we buy? Scrap that! The very day stating this I was so ridiculously hungry that I almost seriously thought about editing the post I had published that very morning. But of course I didn’t. It was just funny to see how quickly things change sometimes.
When I hear Peanut Buttercup I am all in! And when it comes in the breakfast-friendly and healthy form of rice pudding I am certainly one to get the pots out. So for breakfast I tried the Healthy Peanut Butter Cup Rice Pudding from the guy with the epic breakfast recipes. It didn’t disappoint me 😉 As there is nothing like peanutbutter chips in borning Germany (thanks again!) I topped it with some crushed salted peanuts instead. Sweet and salty perfection!
On my way to work I stopped at a supermarket to buy some cleaning supplies and my student assistant and I spend the entire morning cleaning the office. It was so dusty and urgently needed a little love! I took a mini break for a tiny apple and a huge glass of coconut water.
Around 12 I needed a second break to have lunch. I had Sunday evening’s leftovers with me. Satay Rice Noodles with roasted turkey breast, sugar peas and pepper. It was very very good and I could have eaten this portion twice if there had been any more.
And as I still totally hungry after this I had a dessert in form of a Spicy Lime Raw Bite. The one that tastes a bit like a Key Lime Pie. I say a bit but actually it doesn’t of course.
In the afternoon I worked on several things avoiding to answer some emails that require me to say NO to some people or which require a length and depth in answer that just didn’t felt like typing up. Seriously emails are not the right medium to discuss anything. When I was hungry again around 5 pm I was beyond believe! Like Really????
So I quickly headed to the supermarket and got me a pretzel breadstick with pumpkin seed and a green smoothie. This finally tamed the ravenous feeling!
At 8 pm I went to Crossfit and hurt my lower back whilst squatting. I immediately stopped and moving around a bit I figured out I must have dislocated a lumbar vertebra. I told my coach and he made my lie down and moved my legs and upper body like a pretzel. When I was lying in the right position he put some more pressure on my hip and shoulder and reset my back. It made a horrible crack but besides a little tightness of the muscle everything was back to normal! I am so glad I go to a place with such a skilled person to take care. If he hadn’t fixed it I would surely not be able to walk today! I could even finish the class – though I didn’t finish the squats and took it a little lighter than usually 😛
The class took forever and I left the gym at 10 pm – around 1 h later than usual. Luckily I had brought my dinner. Chocolate and Banana Protein Shake. I bought this blender bottle a few weeks ago and I totally love it. The color alone is a reason to love it in my books but there’s also a metal spiral in there that helps you blend the liquid and powder together. It works brilliantly. I came home short after 11 pm and there was not much to do but showering and
going to bed falling asleep on the couch!
Today I am working from home and later I go to work at Starbucks. I haven’t done that in ages and I am already looking forward to it a lot. In the evening I go to my PhD colloquium and then I have a date with my husband. Summer has come to Munich and my mood is just fantastic. Slowly I start to get the creeps from myself. My constant good mood cannot be real. My gloomy mood is what I’m used to. Maybe a short summer high that will pass eventually 😛
