Happy St Patrick’s Day lovelies! Okay I might be a bit late but nonetheless we’ll paint the town green today! In honor of St Patrick’s Day I made a decent effort to eat as much green stuff as possible. Of course I only count the natural green ones and not the nasty stuff made by chemistry. Though I admit it’s fun to drown a green colored beer. But pssst don’t tell my fellow Bavarians as this is basically treason here!
I started the day with some green-ish melon. I can’t say how happy I am that the time of apples only is over. Don’t get me wrong, I do love apples but after month of fruit deprivation I crave and embrace variety.
Of course that didn’t last long! So as a snack/ second breakfast I had a green smoothie. This was actually the Sort-me-out Green Smoothie. My favorite at the moment!
For lunch I made a staple of mine: Spinach Quesadillas. I just love the combo of spinach and cheese and it’s even better when you add a little tomato paste to the spinach. This balances out the garlic and onions nicely. I could bite in another one right now!
As a dessert I had another piece of my vegan and paleo Healthy Rocky Road! Can I get a Yee-haw please!
In the afternoon I had one of those Raw Key Lime Pies. The fact that there’s avocado in there doesn’t really blow Stefan’s mind but I like them a lot. And it only takes 15 minutes of preparation and a little time to chill. I like it best when it’s still a little frozen. Perfect
After all this I wasn’t really hungry in the evening so I just went with the last cup of cottage cheese. Ballooning at night isn’t as bad as in the office. Luckily/ sadly it’s been the last cup and I really shouldn’t buy any more. This is an old pic so you don’t get to see the green spoon I ate the cottage cheese with. That basically counts as something green. Don’t you agree?

Today I try Crossfit again after another two weeks off. Fingers crossed this is the last pause I had to take. I am so ready to sweat again!
