The week hadn’t started as planned. Actually the week before hadn’t ended as planned either. I am nursing a sick husband and you can believe me it’s a demanding part-time job. I stayed at home to bring him to the doctor and make sure he ate, drank and didn’t gash his head when he needs to move as his circulatory was not very stable at all! Going to the office is often less stressful than this. But the day had a highlight at least, lots and lots of food at home! Big Thanks to Jenn for hosting the food fun!
I had the feeling that it was time to reintroduce Green Smoothies for breakfast. I didn’t feel to well the last days and thought this could be a good idea for detoxing a bit. It’s been a while since my last smoothie and it turned out rather sorbet-like. I had to spoon it but it was good nonetheless.
I brought Stefan to the doctor and went food shopping whilst he was there. My detox breakfast came back at me with a sheer brutality I wasn’t expecting! I was so hungry mid-morning! And I mean so hungry! There was a time when I made it through the morning with just one smoothie. Apparently not anymore. So when we came back home I had half of my intended lunch: potatoes!
After the second breakfast I managed to answer my email and do some other work-related stuff! High Five for the technical possibilities of working from home. For Lunch I had the second half to the potatoes and an apple drizzled with homemade almond butter as a dessert. Simple yet delicious!
In the afternoon I managed to squeeze in a few hours of work again and in between I cooked tea, forced him to eat a little and pitied him a lot. And I enjoyed a pice of Vegan and Paleo Chocolate Brownie. A dessert to die for! Death by chocolate! I toy with the idea to make a spread out of this. This should work brilliantly with pancakes 😀
For dinner I spend a little more time in the kitchen and made 4 portions of my Grain-free Hash Brown Lasagne. Stefan ended up to prefer dry bread 😛 No, jokes aside. It made yummy dinner as well as a great lunch for Tuesday. In the evening we watched Harry Potter and the Deathly Hollows Part I.
Yesterday I ditched Crossfit as I had a sore throat. Fingers crossed I’m not the next one…….
