Before we jump into my Monday eats I need to get something of my chest today. Apologies for being such a bad blogger. I know I have been horrible with answering your comments and I am still about two weeks behind. I totally love every single comment and I will answer them all. I hope to be able to catch up with them all this weekend. Live has been hectic lately and at work some unforseen time-consuming and nerve-wrecking things have come up. I will have to face some changes at work and I am quite upset about it. But live changes and we can’t stop it. And from a different perspective it might be even a good thing. But I need to come to terms with those changes now no matter what… But I won’t bother you with details today. Instead let’s have a look at my food diary. Big Thanks to Jenn for hosting the food fun!
For breakfast I had an Apple Pie Protein Smoothie. I haven’t had a Smoothie in ages and I quite enjoyed a liquid breakfast. At the moments I have problems to eat breakfast and though I usually despise leaving the house in the morning without some food in my system I can’t quite persuade myself of eating breakfast. Drinking it instead worked at least. But I have to admit that there have been more days last week when I just skipped breakfast in favor of a mid-morning snack.
For lunch I had – can you guess please??? – yes, a Burger!!!! Big surprise. Can you imagine that I didn’t really like Burger until the age of 26? That’s crazy! maybe I make up for the years of deprivation by eating them all now! Topped with bacon, guac and sriracha and wrapped in an iceberg lettuce leave. My favorite Burger ever!!!
As a dessert I had a raw bite with a cup of coffee whilst finalizing a research report. Tomorrow I am going to present the outcomes and then a huge huge part of my last year’s work is finally over. I can’t say that I am not freaking happy that this is over!
My colleague Katharina has brought an utterly indecent treat to work this week. Brownies! They are vegan and paleo and utterly indecent as you can’t stop making sounds of ecstasy when you eat them. That’s what I call FOODPORN!
After a long period of negligence the white potato made it back to our plates a few weeks back. I really don’t know why we didn’t buy them for such a long time. And I am speaking of months. Probably even a year! But now they came back and stayed. On monday I just halved them, covered them with a spice/coconut oil mixture and popped them in the over for about 30 minutes. What can I say? Crispy, crunchy & soft spud love!
Today I have a task on my schedule I truly despise! We have to go to the main campus and set up a stand and start touting about our new program run. It feels like cold calling which is the most disgusting thing I can imagine. And the worst part? It’s day 1 of 3
