Hello party people, that was a weekend! Not that I partied much, or at all…. at least not in the traditional sense. But I digress…
I can’t believe how much happened in those last few days since we had a chat together. I spare us all a long prep talk and jump right into my recap.
Let’s start with the social part…
We had an awfully full weekend. On Saturday morning we went grocery shopping and then I had a chat with my sister. I spend the afternoon in the kitchen (more on that later) and in the evening my friend Kristin came over and we had dinner together. She brought a cake and we the three of us had the better part as a dessert. Ooops 😉
On Sunday she left us around noon and in the afternoon we had to leave for a family get together in Munich. My father-in-law and his siblings used to live in Portugal for a couple of years in their teenage years and we all me at a portuguese restaurant. We were 22 including 5 kids and of course we were horrible. We are loud, have 1000 requests and I am totally sure that they were delighted when we finally left. Luckily my family is very generous so I am totally sure we left a huge tip. It was fun to catch up with my family and as always I also provided some distraction for the kids. I am fairly sure they secretly think that I am a bounce house.As a dessert we all shared some Pastel de Nata – a special Portuguese dessert.
Today when I woke up I was totally ready for the weekend. Bummer!!!!
Let’s move onto the work part…
On Friday I had the closing event of my Mentoring Year. It was a really good and interesting event and I was happy to spend some time with this group. We closed the event with a buffet and a glass of Prosecco and then it was all over. I felt so relieved that I was bouncy and happy all evening. It was actually a very weird feeling considering that I was also mentally and physically totally worn out. The leftovers went straight back home with me and I ended the day with a little celebrating of one successful year with myself.
I am currently interviewing all my Mentees for my personal research and I am very happy to say that all interviews went brilliant so far. They are absolutely supportive and tell me their private feelings in great detail. I’ve talked to 5 Mentees already and 13 are still left.
The conference I attended last week provided the last piece of the puzzle I needed to structure my line of argument. I mapped out a work outline in 10 minutes after that and now I am ready to start the writing process. Pretty scary!!! Will I really actually write my dissertation now???
And then there’s the workout part…
On Monday I had to skip soccer for the conference and so I went Tuesday and Thursday to Crossfit. I had to ditch the Wednesday WOD for my PhD colloquium which annoyed me a bit but hey I am an adult and as that I have to reason with myself sometimes…
Both workouts were merely painful and totally crashed me. Thursday was even worse. I hadN’t eaten well enough during the day and my blood sugar levels were way to low. I struggled with the airdyne bike and I needed pretty long to pull myself together after three 30 cal sprints. First thing I did after my workout was to eat a large fruit and nut bar in the car. I am sure it was only the blood sugar as I was instantly way better with some sugar in my system.
Last but obviously not least, let’s move onto food!!!
After I have been asked how to sub the dates in my No Bake Hazelnut & Chocolate Granola Bars I toyed around with prunes a bit. They work out just fine but you have to add a few more oats to the dough when using prunes. I guess with 1/2 – 1 cup more you’ll be fine. It’s also very delicious when you add a little cinnamon. The granola bars get a slightly christmassy flavour then. This happens when you use too much chocolate though… oooops 😉
I was also very happy with my new recipe of Paleo Eggplant Hummus. In the meantime I was told that this dish actually exists as Baba Ghanoush. I don’t mind as it’s pretty delicious. I think the difference is though that I keep the skin in my recipe. I also tried it with the flesh only but found consistency, taste and colour better with the skin.
I also made a batch of Arman’s wonderful Hazelnut Espresso Granola for Stefan but ended eating most of the first jar on my own in only 1 day. This time I kept large granola clusters which I found pretty amazing.
Today my main task is to interview 3 mone people and then I have to yell at my assistant when he will finally show up way too late again. Yeah, I am really serious with being more bossy now! Tina Fey, I need your help!
