Today is the first really cold day here in south Germany. We face a frosty 5°C and everyone is moaning except me. I am thrilled. I am wearing my new scarf and a cozy turtleneck and damn it makes me happy!
It’s also one of those days where I feel the need to say a little more. I haven’t shared a “day in the life” post for forever so I thought I’ll tell you a little more about my day yesterday. It’s a good mixture of everything that’s happening in my life lately – work crazy (not so bad this time but still), great food, workouts, and some cozy time at home mostly spend in the kitchen. Oh my god, that sounds lame even to me!
Okay nevertheless I had a good day – all in all – but why don’t you judge yourself?
As I flip through my food pictures of the last days I realize that I had a pretty veggie heavy week again. Veggie, veggie everywhere. But there just are so many good veggie recipes out there. Many thanks to veggie loving Jenn for cooking up so many great dishes and hosting our weekly food party <3.
The tit bake cravings are back! After having Vegan Orange and Fig Cheesecake for breakfast last week I was definitely in the mood for something warm and comforting. And the tit bake IS by far the best and fastest fix for a pancake craving when you’re a lazy bum and worst pancake flipper ever like me! To make it extra special I topped the tit bake with my mom-in-law’s homemade apple sauce. It’s still chunky and made of our own apples. I love it! I generously sprinkled some cinnamon on top!
In the morning I went to a Crossfit class. We basically only ran, rowed and did turkish get-ups. A horror exercise for an uncoordinated klutz like me! Seriously force me to do something that includes more than two different moves and I am a headless chicken! I irritate myself quite easily and this irritated me big time!
I had big plans for the day. Mainly ticking most boxes of my work to-do-list for the week but of course life chose a different path. But when I came to the office something really annoying happened. I saw two emails that set my tasks for the day. Two of my guest speakers I had invited for a workshop in the evening called in sick and I was left with only one guest. So I had to cancel the workshop. Means I had to call 20 participants – most of them several times – and make sure nobody would show up. It took me 4+ hours. And as a plus I need to plan the workshop all over again. How annoying.
The good thing definitely was my packed lunch! A small Hokkaido Pumpkin stuffed with Chili con Carne and topped with cheese.
I was pretty full after the pumpkin but a little later in the afternoon, after I had managed to get everyone on the phone or reply to my email I gave me a minute to relax. Luckily there was a Spicy Lime Bar left in my drawer which I enjoyed along my 4th cup of coffee. It was definitely a 4 cups of coffee day!
I worked on some tasks in inhuman speed just to do something productive and compensate for the destructive day and then at 5.30 pm I called it a day. I drove to our hometown and met Stefan at our local supermarket, we did the groceries in supersonic speed and raced home. He was only in for the time he needed to change his work bag for his gym bag and then we went off to his soccer practice.
I hit the kitchen and whipped up some roasted veggies with guac and eggplant hummus for our dinner. I munched on some raw carrots in the cooking process and also had an unpictured breakfast bite I made for Stefan the other day.
Additionally I tried a new recipe of a Sweetpotato and Chickpeas Burger which we have for lunch today and most possibly tomorrow, too! Good stuff!
When the hubby came back home we opened a bottle of white wine and had dinner together. We spend the better part of the evening catching up but I was fast asleep short after 10 pm.
Okay lovelies, I am trying to tackle that to-do list today. But I don’t make such plans anymore because maybe if I did, who knows what would happen…..
