I hope you all had a fantastic weekend so far. My weekend hasn’t really started as I have to work today. I have a training scheduled on a Saturday for my Mentees as they always whine that during the week there’s just so much to do and that they can’t attend Mon-Fri. So I though, okay, I can come to work on a Saturday too if all the poor overworked participants can only make in on the weekend. But guess what – shocking – 5 people showed up. 5 out of 24! 5!!! I mean, seriously? Who are they kidding? Can’t they just say that it’s not their priority to attend those trainings and I can schedule them in the week? 5 is btw the worst attendance quota this year! But never mind, lesson learned. NO MORE SATURDAYS FOR ME!
At least I have some time for my blog and my thesis
But following my priorities I am linking-up with Arman today (or rather tomorrow) for the 1st flashback style Spill it Sundays edition.
As I am hungry at the moment and due to my Whole30 feel like a little missing out on some food fun I thought I will highlight three recipes of mine today. I’ll show you those I’d like to eat right away if they were Whole30 approve! Funnily enough this would make a vegan day for me 😀
1. Creamy Coconut Maple Oats with Berries
I’d start the day with a bowl of my Creamy Coconut Maple Oats with Berries. I just love the combination of Maple Syrup and Coconut and oats are one of my all time favorite breakfast ingredients.
2. Lemon & Garlic Asparagus Focaccia
For Lunch I would bake my lovely Lemon & Garlic Asparagus Focaccia. I love soft breads and especially the Italian soft and salty Focaccia. And I find the combination of lemon, garlic and asparagus simply divine. This just is a trinity match made in heaven! Now add some sea salt and pepper and I swear you’ll finish off the whole pan in a single blow.
3. Spicy Vegan Burger
I’d finish my day with this blissful Spicy Vegan Burger. The burger patty is one of Stefan and my absolute favorites and I usually make a huge batch and freeze them. They go along fantastic with salad or you can enjoy them even plain. You can pack them and have them as a snack or as a full meal depending on the size. I vary a bit and make some big and some small ones for various purposes. The curry bun is quite nice with the spicy patty but the sauce makes all the difference. If you decide to make that burger you can use any other bun but you have to promise me to make this sauce along with the patty.
Okay now I am officially hating myself for putting together this post while being on a no grain, no legume diet 😛
But it’s okay as we’ll have a BBQ again tonight! And Stefan being the king of marinades makes every simple BBQ an explosive taste buds party.
