Christmas Spirit fully hit me last night as I discovered this…
I also started to bake my christmas cookies. This is my favorite 4 weeks of the year. Unfortunately I already know that the snow will melt this weekend the latest but anyway I am happy for the christmas spirit! And as I took Friday off of work I only have one more day to go. It will be a long day as we have a workshop with 40 participants but we are giving it in a group of 4. So it’s not too much stress!!!
Yesterday was a lovely day regarding food. So many veggies 🙂

My morning started as usual with a bowl of cinnamon oatmeal. I topped it with a big batch of unsweetened applesauce and some raisins. LOVELY! I rediscovered vanilla soy milk for me and so I had my coffee with a vanilla blast 🙂
Driving took us a little longer than usually due to the snow but I enjoyed the ride through the snowy landscape a lot!
I arrived at the office and immediately made early leaving plans. Working long hours and christmas spirit doesn’t go well together. I bargained with myself that as soon as I had my work done I would leave. So that meant leaving around 3pm was possible! Enough motivation for me! Around 9.30am I had my first snack. Essner bread with homemade sunbutter and a cup of coffee with soy milk. I have never had sunbutter before but I fell in love instantly. I used this recipe but didn’t follow the measures completely. And I substituted ghee with olive oil. Turned out delicious! I am already half through! Oooops 🙂
It was so beautifully snowing outside while I ate that I had a hard time staying in my office. I watched the snowflakes dancing in front of my window. A perfect cozy moment!
As I was craving a big salad for dinner on Monday I decided to make it a lunch for Thursday as well. So we had a big green leafy salad with mixed bell pepper, olives, buffalo mozzarella, avocado and a fig balsamic vinaigrette. It did not look pretty today anymore but the taste was perfect! A lot af veggies, some protein and healthy fats! WINNER!
I had some veggies left in the fridge so I brought some carrots, celery and tomatoes and had it with my cottage cheese as an afternoon snack. As a workout was scheduled I needed some extra fuel. Plus I decided to lower my carbs intake in the afternoon. So #hoorayveggie!!!
I left the office 3.15pm and headed to the mall. I had a coffee and did some christmas shopping. I had a fabulous time and too soon it was time to leave. I picked up my husband at 6pm and he drove me straight to my personal trainer. I had a quick but challenging session. As my arms and calves where still a little sore from carrying our stuff (including around 500 books) upstairs and downstairs I did not really kill my workout but was nearly killed by it myself 🙂
I changed quickly and headed over the bridge to a nice restaurant where I met up with my Daddy and sister. I hadn’t seen my Dad for two weeks now and going to Vienna that weekend means not to see him for two more weeks. So I was happy we three found the time to go together. I had a baked potato (no sour cream) with a big salad as a side and some beef stripes. I forgot to take a picture of my dish but I assure you it was very good!
Now I am going to make my husband’s Advent calendar. I am so looking forward to giving it to him. I will show you what I gave him next week 🙂 Later I will go to the gym for some lifting. Around 4pm I’ll meet up with my friend Cili and we’ll go to our PhD colloquium together. It’s always nice to go there together.
