Hello everyone,
the day is almost over and I am finally having some time at my desk for catching up with some e-mails and paperwork. I also manage to find the time for my delicious pre-workout, post stressful workafternoon snack: Gingerbread Mug Cake! And since it’s Monday I will spare us any further explanation and share with you the recipe.
I had a nice Monday morning starting with a CMS training course. Since I am a blogger and also responsible for our project homepage I thought it was about time to learn to manage the content properly. Back in the office I found a few minutes to stuff my face with some sandwiches (chicken breast and pb& banana). Perfect! Then I had to rush to the next workshop. This time it was me giving the workshop. I hate when the week starts full speed but at least the day passed by quickly! At the moment I am truely living for the weekends. Not because I don’t like my job but I have the feeling that I cn’t sit down and breath a single time during the week. Luckily it’s the last stressful week since my workshops are over then.
But now let’s move onto the deliciousness….
It’s the time of the year when you can’t enter a shop without almost being overrun by christmas candy, cookie and other sugary but oh so delicious stuff. Being from Bavaria it is not possible to prevent any contact with Nuremberg gingerbread. Or as I call it: fabulous wicked temptation. My favorite of course are the chocolate covered one ♥
It’s so lovely! All nutty and chocolaty still moist and divine! So it’s out of question to indulge into the gingerbread but it’s not an option not to have it either. So I needed a good replacement. And a quick fix. Since the feeling of NEEDING gingerbread must me satisfied quickly in order to prevent my weaker self from buying the stuff. What’s better for a fast craving than a mug cake? Yes, nothing!So here you go with my favorite gingerbread mug cake recipe.
Gingerbread Mug Cake
- 3 tbsp almond flour
- 1/2 cup unsweetened apple sauce
- 1 large egg white
- 1 tbsp raw cacao powder
- 3 tbsp chocolate rice protein powder
- 2 tbsp hazelnut milk
- 1 tbsp ground hazelnut
- 1 tbsp gingerbread spices
- a pinch of baking powder
Directions:
- Mix it all together
- Pour in a mug and microwave for 3-5 minutes
Nutritional Information: 340 kcal, 14g fat, 10,7g carbs, 37,7g protein
It’s got everything I ask from a good gingerbread cake. It’s nutty, chocolaty and moist. YAY! WINNER!!!! I am always so happy when I find a good healthy replacement for my sweet cravings. And Christmas is definitely the time of temptation. Everything smells so good and when you go to a Christmas fair there simply is no way you can say NO to all the goodness. And I certainly don’t! So you need to make smart decisions at home at least! This mug cake is one. Try it!
At the moment I am thinking about healthy treats for my husband’s Advent calendar. I decided to alternate healthy and not so healthy treats.
Any recommendations?

Adding almond flour and ground hazelnuts is such a great idea! I wouldn’t forego the ‘real deal’ completely, though, especially as you’re right at the source of some of the best treats in Bavaria :). How about going for the chocolate-covered ones one day and your great mug cake the next?!
Regarding advent calendar recommendations I’d suggest not only adding food items but also some non-food things. DM usually is a good place for buying those small sizes of lotion, aftershave, … As for healthy snacks you could prepare differently flavoured raw balls, wrap them individually and add those.
No I could never deny me the original completely! But I can’t stuff my face with a whole box of it every day either 🙂 And I swear I could 😉
He is not so big using all those items. I learned the hard way as I tried to give him an Advent calender with these thing three years ago. Most of the stuff is still unopend.
