I can’t believe that it’s technically Friday for me today!!! Unfortunately I am in the office today though it’s Wednesday. I am taking the rest of the week off and I am flying to the UK tomorrow around noon.
My friend Kristin and I planned that girls weekend in London for ages and I am so happy this finally happens!!! In between I was sure we would never make it. But a couple of weeks ago we decided spontaneously to book our flights and accomodation. Kristin is a lucky sod since her employer pays for her flight as she is working in London today. She was able to extend her stay and the employer pays for her return flight on Sunday as well. So this weekend pretty much screamed at us to make it our girls weekend in London! We did not plan anything but a lot of shopping and food. Isn’t there anything better you can do with a girlfriend?
So I am extremely busy to manage a 5 day workload in 3 days. It’s not easy and I am very grateful for my hardworking student assistants who support me brilliantly. A lot of working long hours is included as well and I have so little time for meal prepping that I thought about skipping this WIAW. But it’s my favorite blogging day of the week. Being busy is more a continuous state at the moment and I object against it interfereing with my hobbies. So here are my Tuesday eats in a hurry 😉
As yesterday was so busy I was surprised that I only forgot to picture one snack. It was Cottage Cheese so never mind 😉
I am still on that apple pie topping with my oatmeal trip. But something horrible happend yesterday! I ran out of cinnamon and had not a single bit left for my oatmeal. I did not feel like plain oats so I thought adding some chocolate would be nice.
I am still not getting enough protein so I added some chocolate rice protein powder and some raw cacao powder for a richer flavor. Delicious! For extra crunch it topped the whole bowl with some protein granola. And of course there was coffee with hazelnutmilk .
I swallowed an unpictured cup of cottage cheese between two meetings. And had another cup of coffee. Hazelnutmilk is the best. Even better than almond milk. Sorry almond milk – hazelnut is my love now!
Since there is almost no time left for meal prepping I decided to have a simple salad for lunch. Just some green leaves, chickpeas, tomatos and some salsa. Simple but so delicious 😀 And thrown together in less then 3 minutes! Beat that 😉
Hello mug cake! I had no time to prepare something elaborate but did not want to life of egg whites and cottage cheese every single day. So I thought a mug cake would be nice as a little pick me up in the afternoon. I prepared the dough in 2 minutes time and used the microwave at work to bake it. Easy peasy and delicious!
I had chocolate protein topped with some pb. Gosh this was yummy!!!
My personal trainer is back from vacation. I haven’t been on the power plate for 3 weeks and I have to say it was a killer! I went straight home after my workout, showered and started to pack my suitcase for the weekend.
Since the evening continued equally busy supper had to be a quick fix as well. I found some chicken breast in the fridge and made a yummy baked chicken breast with tomato and cheese.
Today I start the day early at work (don’t ask me when I had to get up) and I will go directly to my soccer match that had to be postponed to today from last weekend. My husband took a picture of me this morning packed like a mule for the day. This is my usual luggage when I leave the house in the morning. And no I usually do not even travel that packed!
Hooray to my last busy day of the week! Tomorrow I’ll be off. Thank God! Kristin is at the airport at the moment, ready to take off and her flight is delayed because of a foggy London! Haha! They want us to start the trip with a cliché? Really? Let’s see how my flight will be tomorrow. Have a wonderful rest week bloggy friends! See you next week with a London food wrap-up for WIAW!
