Hello everyone,
it’s Monday again. I can’t understand how sometimes time races and you feel like: Oh what? It’s been Friday only yesterday and now it’s supposed to be Monday? You must be kidding me!!! I feel like I repeat myself but holy cow how can these two days always happen to pass so fast?
Nevertheless my weekend was quite good. On Saturday I managed to go to the hair dresser’s (so needed) and in the evening a longer run was scheduled. I took it easy after my soccer practice on Friday (a lot of jumping and sprinting was involved) and ran for 1,5h at a steady pace. Yesterday it was abs and arms day. I really needed to tackle my abs as they were a little neglected over the last weeks.
I ate way too much in total and unfortunately especially way to much sugar that weekend. I had a backslide regarding my no sugar rule but I am fully committed to NO SUGAR from now on.
Today I have another new fall recipe I happen to invent only last week. You know I am German and unfortunately the German cuisine is normally very rich. One of my favorite recipes is Apfelstrudel – apple strudel which is very very rich indeed! Of course there is almost always a way to make a lighter, healthier version of your favorite recipe. Here you go with my own healthy version of apple strudel…
Apple Strudel
Ingredients:
4 portions
- 3 apples
- 1/3 cup raisins
- 1/2 cup oats
- 1 cup curd
- 1 large eggs or 2 small eggs
- cinnamon
- 1 tbs agave syrup
Directions:
- Seperate the egg and slice the apple
- In a small bowl mix together curd, agave syrup, raisins and the egg yolk
- In another bowl mix together the egg white, oats and cinnamon
- Layer about 1/3 of the apple slices into a fireproof bowl, sprinkle some cinnomon onto them and cover with 1/2 of the curd mixture
- Repeat step #4
- Cover the last layer with the remaining apple slices
- Now add the oats mixture making sure that all the apple is covered with oats
- Sprinkle some raisins on top of the oats
- Cover the fireproof bowl with a lid and put in the oven for 30 minutes at 200°C
- Remove the lid and bake for another 5 minutes until the oats are slightly brown
The oats give a nice crust and add some texture to the soggy apple/curd layers.
Nutritional value (1 portion): 230 kcal, 4 g fat, 33,9 g carbs, 11,5 g protein, 4,6 g fiber
I love the recipe and you really don’t miss the dough apple strudel usually consists of. I like it a lot and with only 230 kcal per portion it’s absolutely bomb! I created it last week when I was craving something sweet and warm. It absolutely hit the spot!
Work is again maniac today and my lunch break is sadly over now. Another 4h till I can perform my sweet escape. This morning I was in a meeting with my boss for 3h. I usually hardly catch her on the phone or get a reply to my email let alone see her and today I was there for 3 solid hours. I am normally a very confident person on the outside but with her I always feel like a 6-grader confronted with a 8-grade math problem unprepared and not ready to solve it. I am always stressed out after a meeting with her. I am really wondering how and why she gives me that feeling. I need to work on that problem another day. For today I have quite some stuff to catch up with. More interviews scheduled this week don’t leave me with much time to do my daily work.
And then tonight it’s soccer practice again. Looking forward to run the stressful feelings out of my system!

This looks absolutely delicious!! Remember, don’t get yourself down for some “slip ups,” everything in moderation is good, nothing needs to be off limits (unless you’re deathly allergic, then I’d say stay away from that haha!) Hope you’re having a wonderful day, love!

Bei One Tree Hill bin ich gerade mal bei Staffel 3 … und ich liebe es imemr mehr, obwohl ich früher echt abgeneigt war .. und zu Pretty Little Liars kann ich ja leider noch nix sagen x)

Ja, bei One Tree Hill gings mir am Anfang ähnlich. Hab mir von PLL gleich die 2. Staffel hinterherbestellt. Man darf über die Handlung nicht genau nachdenken, aber die oberflächliche Unterhaltung ist grandios süchtig machend 🙂 Ähnlich wie bei Gossip Girl 😉
