it did happen!!! I was officially off sick yesterday. I am not totally ill but I felt unwell enough to stay at home. Luckily lunch was already prepared and I just had to fix some quick bites in between.
My day consisted of loads of tea and relaxing on the couch. Today I feel so much better and I am glad I took the day off yesterday.
So here you go with my WIAW post – off sick 😛
I realized over the last few weeks that I am really boring when it comes to food. I am repeating the same snacks and meals again and again. I think I need to think of something new. Slowly I get bored posting the same food weekly and you must for sure get bored seeing almost identical pictures of the same old stuff here. So for this week’s too late but I promise to be a little more creative next week!
Breakfast was my usual bowl of oatmeal topped with chia seed, ground flax seed, blueberries and a spoonful of homemade hazelnut butter. I love the combination of blueberries and hazelnut butter. It’s simply divine!
On usual workdays my hubby and I share a coffee with hazelnut milk in the car. This morning I had my coffe with a holy lot of hazelnut milk on my own. This is so yummy!
I am still absolutely in love with peaches and I make sure to have peaches at home all the time. So meal#2 was a peach and some almonds and cashews on the side. Almonds and cashews are my favorite nuts. I have them almost every day.
For meal #3 I had a bowl of serbian rice with meat we had cooked the other day. It contained rice, chicken breast, fresh and sieved tomatoes, mixed bell peppers and loads of herbs and spices. We followed a recipe for the Termomix we had borrowed from my sister-in-law. It turned out to be a little too salty for my taste buds but it was good though.
I was dreaming of guacamole for a couple of days. Luckily I had half of a ripe avocado and some tomatoes left from the weekend. I finally gave in my cravings and made some guacamole for myself. I did not deny it myself before I just did not find the time to make some the past few days. I was happy to finally have it. It was really creamy and spicy. Perfect for the hot weather. I also had a cup of my beloved cottage cheese with chives. Though cutting out cottage cheese eased my stomach problems I decided to try it again. I will try to cut it down to 4 cups a week. It was my second this week so far so I have restain a little now. Give me a challenge…
I found a recipe for clean cheesecake the other day and decided to give it a try. The crust was made from oats and egg whites and for the cream I used silken tofu, the left yolks, agave syrup and blueberries. The cheesecake is full of protein, healthy fats and good carbs. Perfekt for after a workout. Unfortunately I had no post-workout meal since I had to cancel my workout but my hubby had soccer practice so he needed a energy booster. I made four portions. Two for Tuesday’s supper and two for Wednesday’s lunch. It absolutely hit the spot.
Today is my home office day and I need to work for my study. Only two days left till I have to have finished my survey. Fingers crossed this will be enough time but I am positive.
